The story behind Peter's Yard
Peter's Yard is a crispbread brand inspired by Peter Ljungquist, a baker near Ystad in southern Sweden, and started by two English friends, Ian and Wendy. Its crispbreads take the Swedish idea of a thin, dry, long keeping bread and make it with a rye sourdough, milk and a little honey, which gives a lightly tangy, crackly crispbread that flatters cheese. The Original Sourdough Crispbread lists milk, rye flour, wheat flour, a 12% rye sourdough, wholemeal wheat flour, honey and salt, with only 2.8g of fat per 100g on the label data. The range now includes flavoured sourdough crackers such as fig and spelt and rosemary and sea salt, sturdier flatbreads plain and seeded, and a selection box for gifting.
