Crackers are easy to overlook. They sit at the end of the biscuit aisle, a few brands deep, while the cheese gets all the attention. Yet the cracker changes how a cheese tastes: a delicate water biscuit lets a soft cheese lead, an oatcake stands up to a strong Cheddar, and a dark rye crispbread holds its own against a blue.
