About these crackers

Carr's Table Water Large Crackers, in brief.

Carr's Table Water Large are the table water biscuit in a bigger size: the same thin, crisp bake of wheat flour, palm oil and salt, with more surface for a generous slice of cheese. The label gives a serving of one biscuit as 7.6g.

A 200g pack suits a larger cheese board or a family that gets through crackers quickly. The label declares wheat (gluten) and says the biscuits may also contain sesame.

The large table water biscuit is the answer when a small cracker keeps breaking under a wedge of cheese. The recipe matches the regular pack, fortified wheat flour, palm oil and salt with no raising agent, but each biscuit is bigger, so it takes a proper slice of Brie or a crumble of Stilton with room to spare.

Nothing else changes. It is still thin and dense, docked with holes and baked flat, with a clean snap and a plain, lightly toasted flavour that keeps the attention on the cheese.

Taste and texture

Expect the table water profile: light and toasty, gently salted at 1.5g per 100g, with only 0.6g of sugars per 100g. Fat is 7.6g per 100g, so it stays crisp and dry rather than rich.

What is in it

Flour (wheat flour, calcium, iron, niacin, thiamin), palm oil and salt. The label declares wheat (gluten) and says the biscuits may also contain sesame seeds.

Serving it

Use them where size helps: under a wedge of Brie, a spread of pâté, smoked salmon with cream cheese, or as the base for canapés you cut into halves. On a big board they are the plain cracker that goes with everything.

Brand

The story behind Carr's

Carr's began in 1831, when Jonathan Dodgson Carr opened a small bakery and biscuit factory in Carlisle, with a flour mill alongside it: bread was baked by night and biscuits by day, and in 1841 the business won a royal warrant. The biscuit that made the name is the table water biscuit, a thin, crisp, plain cracker of flour, fat and salt, docked with holes and baked flat so it carries cheese without competing with it. Today the range runs from the table water biscuit in regular and large sizes, plain and with cracked black pepper, to the richer, flakier Melts and a cracker selection box. On our shelf the table water biscuit is the plain partner for soft and delicate cheeses, and the Melts are the choice for snacking and mild toppings.

Packaging: a 200g pack. Once the pack is open, fold it tightly closed or tip the crackers into an airtight tin, and keep them somewhere cool and dry. Damp air is what softens a cracker. The pack gives the best before date.
