Carr's Table Water Crackers, in brief.

Carr's Table Water Crackers are the classic thin, crisp water biscuit: wheat flour, palm oil and salt, rolled thin, docked with holes and baked until they snap. They are made to carry cheese without competing with it.

The label carries vegan, vegetarian and kosher claims, and says the biscuits may contain sesame. At 7.7g of fat and 1.5g of sugars per 100g they are lean and barely sweet.

The water biscuit is the classic cheese board cracker, and the table water biscuit is its plainest form. Three ingredients go into it: fortified wheat flour, palm oil and salt. There is no raising agent, so the dough bakes thin and dense and breaks with a clean, dry snap.

That simplicity is exactly why it works. A plain, crisp biscuit lets a soft, delicate cheese taste of itself, and it does not add sweetness or richness that would blur the flavour of a good Brie or a fresh goat's cheese.

Taste and texture

Expect a light, toasty wheat flavour, a gentle saltiness (1.5g per 100g) and very little sweetness. The texture is thin, dry and crisp, with a snap that holds even under a soft cheese.

Flour (wheat flour, calcium, iron, niacin, thiamin), palm oil and salt. The label declares wheat (gluten) and says the biscuits may also contain sesame; the label data adds milk, mustard and soya as possible traces. The pack carries vegan, vegetarian and kosher claims.

Serving it

This is the cracker for soft and delicate cheeses: Brie, Camembert, fresh goat's cheese and cream cheese. It also suits smoked salmon, pâté and a slice of good ham, and it is the safe choice for a mixed board where you do not know your guests' tastes.

The story behind Carr's

Carr's began in 1831, when Jonathan Dodgson Carr opened a small bakery and biscuit factory in Carlisle, with a flour mill alongside it: bread was baked by night and biscuits by day, and in 1841 the business won a royal warrant. The biscuit that made the name is the table water biscuit, a thin, crisp, plain cracker of flour, fat and salt, docked with holes and baked flat so it carries cheese without competing with it. Today the range runs from the table water biscuit in regular and large sizes, plain and with cracked black pepper, to the richer, flakier Melts and a cracker selection box. On our shelf the table water biscuit is the plain partner for soft and delicate cheeses, and the Melts are the choice for snacking and mild toppings.
