Rakusen's Flame Baked Matzo Crackers, 150g
Two ingredients, flour and water, flame baked: one of the plainest, leanest crackers on our shelf and a blank canvas for toppings.
Rakusen's Flame Baked Matzo Crackers, in brief.
Rakusen's Flame Baked Matzo Crackers are made from just two ingredients: fortified wheat flour and water. No salt, no fat, no raising agent: a plain, crisp, blistered cracker.
That makes them one of the leanest crackers we sell, with 1g of fat per 100g on the label data, and a blank canvas for any topping.
Matzo is unleavened bread, flour and water baked quickly and very hot, the bread of the Jewish Passover. Rakusen's matzo crackers are flame baked, which gives the charred blisters and the dry, brittle snap.
With nothing else in the recipe, the flavour is purely toasted wheat. That plainness is useful: matzo takes butter, cheese, jam or a dip without adding salt or fat of its own.

The story behind Rakusen's
Rakusen's was established in 1900 in Leeds by Lloyd Rakusen, a watchmaker by trade, who began by baking matzos in his own back room. After his death in 1944 the company passed to his family, and Wikipedia records that it has been owned by Andrew Simpson since 2015, still operates in Leeds, and has all its products certified kosher by the London Beth Din. Matzo is unleavened bread: flour and water, baked fast and hot so it blisters and snaps. The Rakusen's matzos on our shelf list just wheat flour and water, which makes them among the plainest, leanest crackers we sell, a blank canvas for butter, cream cheese, smoked salmon or chopped liver.
Packaging: a 150g pack. Once the pack is open, fold it tightly closed or tip the crackers into an airtight tin, and keep them somewhere cool and dry. Damp air is what softens a cracker. The pack gives the best before date.
