Dr. Karg's Pumpkin Seeds Protein Thins, 150g
A crispbread with a different job: seeded, crunchy and high in protein on the label data, for toppings and lunches rather than the dainty end of the board.
Dr. Karg's Pumpkin Seeds Protein Thins, in brief.
Dr. Karg's Pumpkin Seeds Protein Thins are thin, seeded crispbreads built around protein: 33g per 100g on the label data, with 7.8g of fibre. The label name is Protein Knäckebrot Kürbiskern, German for protein crispbread with pumpkin seed.
The pack carries vegan and vegetarian claims. It declares wheat (gluten) and sesame and says it may contain milk. The label data gives the place of manufacture as Schwabach in Germany.
Most crackers are mainly starch. These are not: at 33g of protein and only 31g of carbohydrate per 100g on the label data, Dr. Karg's Protein Thins turn the usual balance round, and pumpkin seeds and sesame give a crunchy, nutty bite.
They are thin, hard crispbreads in the German Knäckebrot tradition, made for topping. Their seeds make them substantial enough to eat with soup or salad, and firm enough to hold a heavy topping.

Taste and texture
Expect a nutty, toasted seed flavour and a hard, crunchy bite. Fat is 21g per 100g, from the seeds and oil, and salt is 1.9g per 100g, so they are savoury and satisfying rather than plain.
What is in it

Serving it
Top them with cottage cheese or hummus, avocado and chilli flakes, or a firm goat's cheese. They are also a good side for soup and salad, and they take smoked salmon and cream cheese well.

The story behind Dr. Karg's
Dr. Karg's traces its roots to a small village bakery in Franconia founded in 1950, and it bakes in Schwabach, Bavaria, as Dr. Klaus Karg KG. Klaus Karg started the crispbread side of the business, and the company says its very first crispbread was Emmental cheese and pumpkin seed. Its crispbreads are thin, hard and full of seeds and wholegrains, in the German Knäckebrot tradition. On our shelf, Dr. Karg's Pumpkin Seeds Protein Thins carry 33g of protein per 100g on the label data and a vegan claim.
Packaging: a 150g pack. Once the pack is open, fold it tightly closed or tip the crackers into an airtight tin, and keep them somewhere cool and dry. Damp air is what softens a cracker. The pack gives the best before date.
