Carr's Melts Cheese Crackers, in brief.

Carr's Melts Cheese are rich, round crackers with dried cheese powder baked into the dough and poppy seeds on top. They are the most savoury of the Melts range and taste of cheese before you have added any.

At 23.2g of fat per 100g they are tender and flaky rather than hard, which makes them a snacking cracker as much as a cheese board one. Put them out with drinks, in a lunchbox, or alongside a cheese board as the cheesy option.

Carr's Melts are built for a softer, richer bite than the table water biscuit. The dough uses coconut and palm oils and is raised with ammonium and sodium bicarbonate, which gives a light, layered crumb that melts on the tongue rather than snapping. The cheese version adds 9% dried cheese powder, onion and a natural flavouring made with whey and lactose, then a scattering of poppy seeds.

That makes these the Melts to reach for when you want the cracker itself to carry flavour. They are good on their own with a drink, and they suit mild toppings that would be lost on a stronger base.

Taste and texture

Expect a savoury, cheesy flavour with onion in the background and a little sweetness (7.3g of sugars per 100g). Salt is noticeable at 2.2g per 100g. The texture is short and flaky, closer to a savoury biscuit than a dry cracker.

Wheat flour, coconut and palm oils, dried cheese powder (9%, milk), sugar, dried onion, natural flavouring containing dried whey and lactose (milk), raising agents, poppy seeds, salt and carotenes for colour. The label declares wheat (gluten) and milk, and says the crackers may contain egg, mustard, sesame and soya.

Serving it

Serve them with drinks as they are, or top them with something mild: cream cheese and chives, a slice of ham, or a little pickle. On a cheese board they are the cheesy cracker for guests who want one, next to plainer water biscuits for the stronger cheeses.

The story behind Carr's

Carr's began in 1831, when Jonathan Dodgson Carr opened a small bakery and biscuit factory in Carlisle, with a flour mill alongside it: bread was baked by night and biscuits by day, and in 1841 the business won a royal warrant. The biscuit that made the name is the table water biscuit, a thin, crisp, plain cracker of flour, fat and salt, docked with holes and baked flat so it carries cheese without competing with it. Today the range runs from the table water biscuit in regular and large sizes, plain and with cracked black pepper, to the richer, flakier Melts and a cracker selection box. On our shelf the table water biscuit is the plain partner for soft and delicate cheeses, and the Melts are the choice for snacking and mild toppings.
